Chocolate Beet Bread

With the brief drop in temperatures and an extra large batch of beets from my csa share, it felt right to turn on the oven once again to bake up this chocolate loaf.  After some deliberating I settled on calling this a bread rather than a cake. While it feels slightly indulgent for breakfast, it’s a bit less sweet than most cakes and those beets make it extra redeeming.  The beets also keep the bread moist and soft and add a subtle earthiness to deepen the chocolate.  I like it simple and unadorned especially for breakfast, but if you’d like to serve it as a dessert, a drizzle of chocolate ganache would help dress it up and add a touch of richness or a quick dusting of confectioners sugar would also do nicely.  Serve warm and along with a dollop of whipped coconut cream. Lavender Lemon Spelt Scones

Each school morning we begin with a full hour of reading as I’ve found it’s been quite a pleasant and sweet way to begin our school time together. We curl up on the couch, sip tea, and immerse ourselves in piles of books.  On one of the days during this past week, I thought it would be fun to do something a little extra-special-  a simple breakfast and reading time in bed.  My daughter was completely delighted.  We took turns reading to each other as we ate our scones and sipped our tea.  During this season of homeschooling, I’ve prioritized our reading time together with hopes that it will rekindle her love for books and her curiosity to learn.  It’s in these small ways that I hope to make reading and learning a positive and joyful experience for her.  We’ve already noticed small changes-  she now reads on her own again, the lists of books she wants from the library are getting longer, and she is always excited to begin the school day because of these shared times of reading.  We are thankful.

Turkish Baked Eggs

Turkish Baked Eggs

My birthday was last week and I had every intention of baking myself an elaborate cake to celebrate, but things came up and it didn’t happen.  Instead Ryan was able to take the day off from work last minute and we spent the day together, going out to both lunch and dinner (a rarity for us these days).  The local restaurant where we enjoyed our lunch is a favorite of mine; it boasts an eclectic menu to please almost any palette- sweet and savory crepes, a wide assortment of egg dishes, beautiful salads, delectable sandwiches- all with fresh and often organic ingredients.  I quite frequently order the turkish eggs-  two eggs oven-baked sunny side-up, nestled in a bed of sautéed spinach with hints of oregano, served alongside tomatoes, cucumbers, olives, and a slice of warm softened feta.
