Last week’s spring break at home with the kids unintentionally resulted in a lot more baking and a lot less cooking.  Not quite sure how it ended up that way, but the days passed by quickly and I have no regrets of how we spent our time together.  One of the things my daughter looked forward to most over the break was being able to host a tea party for her grandparents.  According to her, it was to be a tea party featuring her scrambled eggs.  Scrambled eggs are her specialty; she loves to cook them for anyone who will eat them.  She has such a sense of accomplishment after she’s cracked her own eggs, whisked in the milk, sprinkled in the salt and pepper, and scrambled it together on the stove.  Although it may sound simple, to her it is not, and she is proud of being able to do everything on her own.  She couldn’t have been more excited about being able to cook for her grandparents.  It gives me great joy to see her taking initiative in bringing others together, to share good company and delicious food .

Along with Evelyn’s scrambled eggs, we served a bowl of fresh berries and arranged a tiered tray of cardamom vanilla breakfast cookies, mini-jars of soaked muesli with chia jam, and these carrot banana muffins.  I don’t know what else to say about these muffins besides that they are incredible.  They are sweetened almost entirely with dates, only a touch of honey, and made with a spelt and almond flour blend.  They are wonderful for breakfast, as a snack, or even as a healthy dessert.  The texture is fairly dense, but also very soft and moist. The honey cream cheese is a fun surprise in the middle and makes these taste like carrot cake without all of the added sugars.  Carrot cake for breakfast?  Oh yes, I can always be on board with that.

Carrot Banana Muffins {with honey cream cheese}
Serves: makes 16 muffins
 
Ingredients
  • 5 ounces cream cheese
  • 3½ tablespoons honey, divided
  • 1 cup spelt flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine grain sea salt
  • 1 teaspoon cinnamon
  • ½ cup unsweetened shredded coconut
  • 3 large eggs
  • ½ cup butter, melted and slightly cooled
  • 1½ cups mashed banana, (about 3-4 ripe bananas)
  • ½ teaspoon apple cider vinegar
  • 1 cup pitted medjool dates, chopped (about 9-10 dates)
  • 2 medium carrots, grated
  • ½ cup chopped walnuts
Instructions
  1. In a small mixing bowl, whisk together the cream cheese and 1½ tablespoons honey until creamy and smooth. (Using a stand or hand mixer here is helpful.) Place in the refrigerator to chill while making the muffin batter.
  2. Preheat oven to 325. Lightly butter a 12-cup muffin tin and 4 cups of an additional muffin tin.
  3. In a medium mixing bowl, mix together the flours, baking powder, baking soda, salt, cinnamon, and coconut.
  4. In a large mixing bowl, whisk together the eggs, butter, banana, vinegar, and remaining 2 tablespoons of honey. Stir in the dates. Add the dry ingredients to the wet ingredients and stir until just combined. Gently fold in the chopped walnuts.
  5. Place about 1 slightly heaped tablespoon of batter into each muffin cup. Transfer honey cream cheese to a piping bag. Cut the tip off and pipe a small amount of cream cheese in the middle of each muffin cup, dividing evenly among the 16 muffin cups. Divide the rest of the batter among the muffin cups, gently placing on top of the cream cheese.
  6. Bake 27-30 minutes, until a toothpick comes out clean. Allow muffins to cool in the pan for 10 minutes before transferring them to a wire rack to finish cooling. These taste delicious both at room temperature or chilled. Store remaining leftover muffins in an airtight container in the refrigerator.

Yes, it’s now officially the first week of Fall and I am already taking a break from Fall flavors to discuss the awesomeness of these frozen chocolate banana pops.  I had been saving these cute wooden sticks from The TomKat Studio  for what seems like forever and I finally decided that these frozen banana pops were worthy of their use.

Eating these take me back to carefree childhood days and I feel like I’m eating something completely indulgent, except they are actually not so bad for you since they are basically just frozen bananas wrapped in some dark chocolate.   Banana pops are fun and simple to make.  First, cut each peeled banana into small pieces and insert a wooden stick into each piece.  (I cut the bananas into fourths and cut the tips off of the ends so that each piece had a more uniform shape.)  Next, freeze the bananas for at least a couple of hours.  It’s important to be patient and not skip this step.  Now is when the fun begins!  Melt the chocolate with a bit of coconut oil so that the chocolate becomes slightly thinned and velvety smooth.  Take the frozen banana pop and quickly dip it into the melted chocolate.  Allow the excess chocolate (is there such a thing as excess chocolate?!)  to drip off the banana and watch it solidify into a yummy chocolate shell.  If you want to add a topping, dip the chocolate covered banana into the topping before the chocolate completely solidifies.  If you wait too long, the toppings will not stick, but if you dip too soon, you will have a sticky mess.  Takes a little practice, but you will get it, I promise.  I think I am going to go order a huge supply of these wooden sticks because from now on, we are going to be making these all of the time.  I’m thinking birthday parties, playdates, family nights…. chocolate banana pops for everyone.  Oooh yeah.

Frozen Chocolate Banana Pops
Serves: 16-20 pops
 
Ingredients
  • 2 3.5-ounce dark chocolate bars (I used bars with 72% cacao)
  • 1 tablespoon + 1 teaspoon coconut oil
  • 4-5 bananas, cut into pieces
  • sprinkles, coconut, or crushed peanuts for dipping
Instructions
  1. Insert wooden stick into each banana piece. Freeze for at least 2 hours.
  2. Set a small glass mixing bowl over a small saucepan of simmering water and place the chocolate and coconut oil in the mixing bowl. Stir until the chocolate is completely melted and smooth. Pour the chocolate into a medium sized glass for easier dipping.
  3. Quickly dip each frozen banana piece into the melted chocolate and allow the excess chocolate to drip off. After the excess chocolate has dripped off, but before the chocolate is completely solidified, dip the chocolate into desired topping. Serve immediately or return to freezer to serve later.

Banana Sushi with Strawberry Chia Jam and Almond Butter

Last week the kids’ back to school packets came in the mail.  Is summer really almost over?!  As much as I love food and cooking, one thing I have come to dread with the school year is packing lunches.  I have no creativity when it comes to making fun lunches for the kids.  I know there are tons of ideas floating around on pinterest, but it’s overwhelming to look at all of that cute stuff and feel like there’s no time and/or energy to make any of it.  “Banana sushi” is one fun lunch that I can handle though.  Here’s one of our favorite spins on banana sushi and it’s totally easy and do-able even on rushed weekday mornings.

Ever since trying this raspberry chia jam from A House in the Hills, I’ve been trying all sorts of variations of chia jams.  They are gorgeous and tasty.  I used strawberry chia jam this time, but almost any fruit chia jam (or store-bought jam) will work wonderfully.  Be sure to make the jam ahead of time and then everything can be assembled quickly in the morning.  Here’s to easy and fun kids lunches!

Ingredients
For the strawberry chia jam:
  • 1 cup fresh or frozen strawberries, halved
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 2 tablespoons white chia seeds
For the banana sushi:
  • 1 whole wheat or whole grain tortilla
  • 1 banana
  • 1 tablespoon almond butter (or sunbutter to make nut-free)
  • 1 tablespoon strawberry chia jam
Instructions
For the strawberry chia jam:
  1. In a small saucepan, combine the strawberries, honey, and lemon juice. Soften the strawberries on medium-low heat, mashing the berries with a wooden spoon or whisk.
  2. Stir in the chia seeds and transfer to a small jar. Refrigerate for at least 1 hour to allow the jam to set.
For the banana sushi:
  1. Spread a thin layer of almond butter on the tortilla and then spread a layer of strawberry chia-jam on top.
  2. Lay the banana across the bottom third of the tortilla and roll up tightly. Cut into one-inch pieces and serve.
