Fig, Honey, Pistachio, and Goat Cheese Quesadillas

Last week Ryan and I were able to go on a mini getaway to northern Michigan to celebrate our 10 year anniversary.  We spent our time reflecting on God’s faithfulness, going on peaceful walks, hiking beautiful sand dunes, and of course, eating delicious meals.  One of the salads we most enjoyed was a simple plate of fresh figs, pistachios, and goat cheese arranged on a scattering of greens.  It was simple and yet such an excellent combination.  It made me think of The Sprouted Kitchen’s Strawberry and Leek Quesadillas and I knew I wanted to try some of these salad ingredients in quesadilla form.  Along with sliced figs, soft goat cheese, and pistachios, I also added some raw honey to bring out the sweetness of the figs.

Just as in these Strawberry and Leek Quesadillas, I recommend using brown rice tortillas for these Fig, Honey, Pistachio, and Goat Cheese Quesadillas because they turn extra crispy when heated and it provides a nice contrast to the soft figs and goat cheese.  This would make a lovely hors d’oeuvre for any type of festive gathering!

Ingredients
  • 2 brown rice tortillas
  • ⅓ cup soft goat cheese
  • sliced fresh figs
  • shelled pistachios
  • 1 tablespoon raw honey
Instructions
  1. Spread goat cheese on one of the tortillas and layer with sliced figs and pistachios. Spread a thin layer of raw honey on the other tortilla and place honey side down on top of the tortilla with the figs, pistachios, and goat cheese.
  2. Heat both sides on a buttered griddle or pan over medium heat for 2-3 minutes per side, until tortillas become lightly browned and crispy. Cut into wedges and serve.

Watermelon Strawberry Sparklers

 After I graduated from college, I went to live in Taiwan for one year and worked with a local church while also teaching English classes.  Taiwan is a beautiful country, full of majestic mountains and scenic coastlines.  One of the things that I miss most about  living there is the abundance of fresh juice stands everywhere.  I loved riding my scooter around on hot days and then stopping by one of those stands for a cold freshly squeezed juice.  One of my favorites was watermelon juice- so refreshing!

These watermelon strawberry sparklers remind me of those juice stands.  If you use really ripe strawberries and sweet watermelon, no added sweetener is necessary.  Sometimes I add a bit of honey if the strawberries aren’t quite at their peak.  Now that strawberry season is here, these watermelon strawberry sparklers are the perfect way to use up all of those extra strawberries!

Watermelon Strawberry Sparklers
Serves: 2
 
Ingredients
  • 1Ib watermelon cubes, about 3 cups
  • 8-10 ounces hulled strawberries, about 2 cups
  • 1-2 tablespoons honey, optional
  • ¾ cup ice cubes
  • ¼-1/2 cup sparkling water
Instructions
  1. Use a blender to puree the watermelon cubes and strawberries on high speed. Taste and if necessary, add the honey. Add the ice cubes and blend again on high speed until juice is frosty smooth. Divide the watermelon strawberry juice among two glasses and top off with sparkling water.

Peanut Cilantro Sriracha Toast

Peanut Cilantro Sriracha Toast | Gather & Dine

 This sounds like a completely wacky combination, but please do not judge before you taste.  It’s one of my new favorite things to eat.  I once saw this peanut butter cilantro toast  in a past issue of Bon Appetit and thought it sounded a bit strange, but set the idea in the back of my mind as something I might try someday.  Lately though I’ve had Thai food on my mind and suddenly the combination didn’t seem so far out anymore.  I had some extra cilantro around and decided to make this on a whim the other day. It way surpassed my expectations.  In every bite you get creamy peanut butter, refreshing cilantro, crunchy peanuts, and spicy sriracha.  Oooh yeah.  It’s just as easy to make as peanut butter and jelly, but the different layers of flavor and texture make this so much more interesting.  If you do not like sriracha, peanuts, or cilantro, then of course this isn’t for you, but give this a try if you like Thai food.  With another slice of bread on top, it’s going to be a new regular in my husband’s lunch.

Ingredients
  • Slice of whole grain toast
  • Peanut Butter
  • Cilantro
  • Unsalted peanuts, roughly chopped
  • Sriracha
  • Flaky sea salt, such as Maldon
Instructions
  1. Spread a generous amount of peanut butter on a slice of whole grain toast. Top with fresh cilantro leaves, crushed peanuts, and sriracha. Finish by sprinkling some sea salt on top.
