It’s often difficult to find Meyer lemons around here even during the right season, so I am always glad when I stumble upon them unexpectedly.   Meyer lemons are still tart, but are also sweeter than regular lemons and have a slight hint of orange.  Lemon desserts are always so bright and refreshing, but are also usually loaded with lots of sugar to balance the tartness.  Because Meyer lemons are naturally sweeter, I’ve found that it’s possible to use less added sweetener and the dessert will still be well-balanced and delicious.  Last year I made this Meyer Lemon Cream with Graham Crackers and Sea Salt from Bon Appetit and decided I wanted to  make a  healthier lightened up version this year.  I started by swapping out the sugar for honey and also decreased the amount of honey to achieve the right consistency in the lemon curd base.   This honey lemon curd is still very sweet and is wonderful on its own.   Lemon and honey must be one of the most marvelous combinations ever.

Then I swapped out the heavy whipping cream for plain greek yogurt.  I used 1/2 cup of lemon curd for every 1 1/2 cups of yogurt, but increase the lemon curd if you’d like a stronger lemon flavor and a more decadent treat.  The parfaits are topped off with a sprinkle of crushed grahams, lemon zest, and flaky sea salt.  Sweet enough for a dessert, but healthy enough for breakfast.

Meyer Lemon Graham Parfaits
 
Ingredients
Lemon Curd
  • ¼ cup + 2 tablespoons meyer lemon juice, from about 3 lemons
  • ¼ cup + 2 tablespoons honey
  • 2 large eggs
  • 1 tablespoon unsalted butter
Assembly
  • 1½ cups whole milk or 2% greek yogurt
  • ½ cup crushed graham crackers
  • flaky sea salt
  • lemon rind from 1 Meyer lemon
Instructions
Lemon Curd
  1. In a small saucepan, whisk together the lemon juice, honey, and eggs over medium heat. Whisk continuously until mixture thickens, about 8 minutes. Turn off heat and add butter. Whisk until butter is melted and fully incorporated.
  2. Transfer to a glass jar, cool to room temperature, then chill in the refrigerator for at least 2 hours.
Assembly
  1. In a small mixing bowl, whisk together 1½ cups greek yogurt with ½ cup lemon curd. If desired, adjust to taste and add more lemon curd a couple tablespoons at a time.
  2. Add a couple tablespoons of yogurt to 4 small glass jars. Sprinkle with crushed grahams. Layer remaining yogurt over the crushed grahams. Top off with a sprinkle of crushed grahams, lemon zest, and flaky sea salt. These are best served immediately as graham crackers will become soft after sitting in the yogurt.

A few weeks ago, I was able to travel for a quick weekend trip to celebrate the wedding of a good friend.  While I was gone, my sweet children convinced Ryan to take them to the kitchen store so they could welcome me home with surprise presents.  According to Ryan, they went a little nuts shopping and apparently wanted to buy me everything, but they finally settled on some new dish towels and this fluted biscuit cutter set.  I admit the biscuit cutter set is probably not something I would have picked out for myself, but now that I have them, I love them.  In addition to making beautiful edges on biscuits, they are also such fun cookie cutters.

These Peppermint Cacao Nib Shortbread Cookies are a delightful spin on a traditional shortbread.  Crushed peppermint and cacao nibs add a hint of crunch and the peppermint adds a festive complement to the darker flavor of the cacao nibs.   These minty chocolatey cookies are a wonderful accompaniment to some after-dinner coffee.  They would also make a beautiful addition to any holiday cookie platter as well as make a lovely homemade gift.

Peppermint Cacao Nib Cookies
 
Ingredients
  • ¼ cup coarsely broken peppermint pieces (I used natural peppermint candy from Hammond's)
  • ¼ cup cacao nibs
  • 8 tablespoons cold unsalted butter, cut into ½-inch cubes
  • ¼ cup + 2 tablespoons white whole wheat flour
  • ½ cup all-purpose flour
  • 3 tablespoons natural cocoa powder
  • ⅛ teaspoon sea salt
  • powdered sugar for dusting, optional
Instructions
  1. In the bowl of a food processor, pulse the peppermint candy pieces until fairly uniform. Add the cocao nibs and pulse several times. Add the flours, cocoa powder, and salt and pulse again to combine. Sprinkle butter cubes evenly over mixture and process for 30-45 seconds. Scrape down the sides and continue to process just until dough starts to clump together. Transfer dough to a lightly floured surface and gently knead together to form a disk. Wrap in plastic wrap and chill for 15-20 minutes.
  2. Line baking sheets with silicone mats or parchment paper.
  3. On a lightly floured surface, roll the dough until it becomes ⅜-inch thick. Cut into desired shapes and transfer to lined baking sheets. Chill cookies in the refrigerator for 20-30 minutes.
  4. While cookies are chilling, preheat oven to 300. Bake cookies, rotating the sheet halfway through baking time, for 18-20 minutes, until cookies appear dry on top. Transfer cookies to a cooling rack to cool completely. Lightly dust with powdered sugar, if desired.

We hosted a gingerbread house making party over the weekend and rather than making the houses from scratch like I did last year (fun, but totally crazy), we bought kits and just jazzed them up with some of our own candy.  I did however make gingerbread cookies so that the kids could still eat their gingerbread.  (and so our house could still smell like gingerbread!)  I almost didn’t post this with so many gingerbread cookie recipes floating around, but then I decided I wanted it on the blog for myself so I could remember which recipe was my personal favorite.  I’ve tried several recipes in the past that either tasted great, but didn’t hold its shape, or held its shape, but was too crunchy or bland.  These classic gingerbread cookies have just the right amount of spice and are slightly crisp on the edges and soft in the middle.  For me, these are the perfect gingerbread cookies and the ones that I want to keep on making for years to come.

Classic Gingerbread Cookies
Serves: about 2 dozen cookies
 
Ingredients
Cookies:
  • ½ cup dark molasses
  • ¼ cup packed light brown sugar
  • ¼ cup natural cane sugar
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon + ⅛ teaspoon baking soda
  • 8 tablespoons unsalted butter, at room temperature
  • 1 large egg, lightly beaten
  • 1½ cups all-purpose flour
  • 1½ cups white whole wheat flour
Royal Icing:
  • 1 tablespoon meringue powder
  • 1⅓ cups powdered sugar
  • 1 tablespoon + 2 teaspoons water
Instructions
Cookies:
  1. Set a small glass mixing bowl over a small saucepan of simmering water and place the molasses, sugars, ginger, and cinnamon in the mixing bowl. Stir until the sugars are completely dissolved. Stir in the baking soda. When the mixture bubbles up, remove the glass bowl from the heat.
  2. Place the butter in the bowl of a stand mixer. Add the hot molasses mixture and mix on medium-low speed until butter is melted. Let mixture cool to about 90 degrees, then beat in the egg. Gradually add the flours 1 cup at a time and mix until just combined. Gather dough into a disk and cover with plastic wrap. Chill dough for 30 minutes.
  3. Preheat the oven to 325. Line baking sheets with silicone mats or parchment paper.
  4. Place dough on a well-floured surface and roll out until dough is ¼-inch thick. Cut into desired shapes and place cookies on baking sheets. Chill cookies in the refrigerator for 15 minutes. Bake cookies for about 15 minutes, until tops of cookies appear dry. (Do not over bake or cookies will not be soft.) Cool on racks and decorate with royal icing. (I used a Wilton #2 tip for decorating.)
Royal Icing:
  1. Beat all ingredients together until icing forms peaks and starts to appear matte, about 7-10 minutes in a stand mixer. If necessary, add additional water a couple drops at a time to thin.
