Stollen Buns

Christmas menus have been planned by now and there’s hardly a need for another stollen recipe, but I feel the need to post this one for myself.  The recipe I use for stollen is so marked up and scribbled over that it’s hardly understandable anymore, even to me.  It’s evolved over the years to suit our own tastes, and although it’s a deviation from traditional stollen, it’s what we like.  This version is notable for its dried cherries, apricots, and raisins plumped in amaretto and baked into a sweet-but-not-too-sweet dough.  I skipped the powdered sugar coating for a light drizzle of almond scented icing, and this year I decided to make little twist buns (inspired by Jessie’s rolls over here) instead of loaves.

Cocoa Hazelnut Overnight Oats with Sweet Cherries

Just over two weeks ago, I received word of my grandmother’s passing and not long after that, we were off on a plane to Hong Kong.  Having lived to reach 101 years old, my grandmother had a long and full life, and her memorial service was a celebration of that.  We spent ten days in Hong Kong, connecting with family I seldom see, and soaking in the culture of the bustling city.  After indulging ourselves with all the dim sum, noodles, roasted meats, and delectable pastries you could possibly imagine, we were ready again for simplicity and the comforts of home.

Chocolate Chunk Spelt Cookies with Hazelnuts and Cherries

Twice a year our church hosts a gathering of women who come from differing backgrounds and ages, but all have one goal in common- to empower women in extreme poverty through the gifting of micro loans.  Formed out of a motivation to live and serve in a way that reflects Christ’s love, this group is called iZōsh:

“iZōsh is a group of women dedicated to the economic empowerment of women globally who are living in extreme poverty. By giving micro loans to these women we help them to lift themselves out of extreme poverty and reduce the risk of oppression and exploitation in their lives .  Our vision is: To seek first to understand and to not judge; to prayerfully pool our resources to invest globally in women living in extreme poverty, regardless of their faith or beliefs; to honor the dignity of each woman by empowering her through sustainable personal economic development; to invite and welcome other women, regardless of their faith or beliefs, whose goals align with our mission to learn about women’s issues in extreme poverty and then to empower the women living in extreme poverty to transform their lives through entrepreneurial activities“.
