Simple Spiced Mixed Nuts

I hope all of my American friends had lovely Thanksgivings filled with rest and gratitude.  I spent the week with my sister’s family and I’m feeling refreshed, renewed, and ready for the joyous holiday season.  We’ve been enjoying this version of spiced nuts for some time now, but it’s so easy and simple I hadn’t deemed them worthy enough to share before now.  I had made them when it was Ryan’s turn to bring snacks to his tennis league and he came home telling me how much the guys loved them.  It was a good reminder that sometimes simple is best… and who doesn’t love both a simple and delicious recipe?  December seems like the perfect month for  these because there are so many gatherings, so many snacks, and I imagine that a big bowl of these would be welcome at any festive occasion.   These would also make delightful host and hostess gifts as well as beautiful holiday gifts.  The recipe comes from one my mom used to make for us growing up, but I’ve also incorporated some of the spices from Tara’s Seven Spoons version.  I had really wanted to make these with honey or maple syrup, but it just didn’t turn out quite right with those.  Both were tasty, but they didn’t quite have that crisp crunchy sweet coating that I was looking for.  These are a bit less sugary than many of the other recipes out there, but still plenty sweet.  The combination of cumin, cinnamon, cardamom, and cayenne balance out the sugar for the perfect savory, salty, sweet snack.  Happy December my friends!

Slow Cooker Creamy Turkey Rice Soup

Keeping it short today and sharing this super adaptable slow cooker soup, just in case you’re still looking for a recipe to finish up those Thanksgiving turkey leftovers. It’s hard to go wrong with this one since it can easily be made with whatever grains and vegetables you have on hand.   Justs a bit of morning prep and then dinner will be quietly waiting and warm whenever you’re ready for it.  The original recipe called for wild rice, but since my kids aren’t huge fans of wild rice (yet), I swapped half the wild for short grain brown rice and used this wild rice blend for the other half.  Baby steps.  An abundance of vegetables– kale, mushrooms, carrots, celery, and onions– round out the soup to make it a nourishing one-pot meal.   After all of the Thanksgiving feast scramble, I always feel that it’s nice to have some quieter simpler times in the kitchen.  This soup is perfect for those slow post-Thanksgiving days.

Chocolate Chunk Spelt Cookies with Hazelnuts and Cherries

Twice a year our church hosts a gathering of women who come from differing backgrounds and ages, but all have one goal in common- to empower women in extreme poverty through the gifting of micro loans.  Formed out of a motivation to live and serve in a way that reflects Christ’s love, this group is called iZōsh:

“iZōsh is a group of women dedicated to the economic empowerment of women globally who are living in extreme poverty. By giving micro loans to these women we help them to lift themselves out of extreme poverty and reduce the risk of oppression and exploitation in their lives .  Our vision is: To seek first to understand and to not judge; to prayerfully pool our resources to invest globally in women living in extreme poverty, regardless of their faith or beliefs; to honor the dignity of each woman by empowering her through sustainable personal economic development; to invite and welcome other women, regardless of their faith or beliefs, whose goals align with our mission to learn about women’s issues in extreme poverty and then to empower the women living in extreme poverty to transform their lives through entrepreneurial activities“.
