My birthday was last week and I had every intention of baking myself an elaborate cake to celebrate, but things came up and it didn’t happen. Instead Ryan was able to take the day off from work last minute and we spent the day together, going out to both lunch and dinner (a rarity for us these days). The local restaurant where we enjoyed our lunch is a favorite of mine; it boasts an eclectic menu to please almost any palette- sweet and savory crepes, a wide assortment of egg dishes, beautiful salads, delectable sandwiches- all with fresh and often organic ingredients. I quite frequently order the turkish eggs- two eggs oven-baked sunny side-up, nestled in a bed of sautéed spinach with hints of oregano, served alongside tomatoes, cucumbers, olives, and a slice of warm softened feta.
Despite its simplicity, there’s something about this savory combination that has me ordering it again and again. I finally decided to recreate the same thing at home and was so pleased afterwards. I had initially thought this would be a meal of no interest to the kids, but they had fun creating their own little toasts and my daughter suddenly declared cucumbers to be her new favorite vegetable. Sometimes they topped their toasts with just the spinach and egg with a bit of feta, other times they added a crunchy cucumber or salty olive on top as well. This makes a quick yet special brunch or could even be a light dinner. Choosing high-quality ingredients is key so choose the best that you can because it makes all the difference.
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 8 ounces baby spinach
- 1½ teaspoons minced fresh oregano or ½ teaspoon dried oregano
- 1 slice French feta, about ½-inch thick
- sliced tomatoes
- sliced cucumbers
- assorted mediterranean olives
- a few slices of crusty multigrain bread
- freshly ground pepper and kosher salt for seasoning
- Preheat oven to 400.
- In a skillet, warm the olive oil over medium heat. Add the garlic and stir until fragrant, about 30 seconds. Add the spinach, oregano, and season with salt and pepper. Stir for a minute to evenly coat the spinach and then cover the pan. Let the spinach cook covered for 1-2 minutes, until the spinach begins to wilt. Uncover pan and continue to for another minute or so until all of the spinach is wilted.
- Use a slotted spoon to transfer spinach to an over-proof plate, leaving liquid behind. (If your plates are not oven-proof, use a parchment-lined baking sheet instead.) Create a mound with the spinach and make 2 wells for the eggs. Carefully crack an egg each into each well. Place feta next to the eggs on top of the spinach. Bake for 10-12 minutes, just until eggs are set.
- Arrange tomatoes, cucumbers, and olives on the plate and season with freshly ground pepper and flaked salt. Serve immediately alongside some crusty bread.
