Of the many cookbooks on my shelf, there are a few standouts that I’m able to read and reread over and over and always feel newly inspired. Heidi Swanson’s Super Natural Every Day is one of those books. Heidi’s writing is warm and inviting and her approach to healthy cooking is simple yet interesting and full of flavor. Here I’ve taken the quinoa patties from her book and put a little Greek spin on them. I swapped the parmesan for crumbled feta and added fresh oregano, bits of kalamata olives, and some finely chopped red onion. As the patties cook, a crisp and chewy crust forms which makes these especially wonderful. Serve along with some whole grain pita and a generous dollop of tzatziki.
Greek Quinoa Patties with Tzatziki
Serves: 12 patties
Ingredients
- 2½ cups cooked quinoa
- 4 eggs, lightly beaten
- 1 small red onion, finely chopped, about ¾ cup
- ¼ cup sliced kalamata olives
- ½ cup crumbled feta
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh oregano
- ½ teaspoon fine-grain sea salt
- 1 cup whole wheat panko
- 1-2 tablespoons extra-virgin olive oil or ghee
For serving
- tzatziki (see recipe here)
- pita bread
- diced red onion and tomatoes, optional
Instructions
- Stir together the quinoa, eggs, onion, olives, feta, garlic, oregano, and salt in a mixing bowl. Add the panko. Stir until well combined and then allow mixture to sit for 10 minutes or so to allow panko to absorb some moisture.
- Gently form into twelve patties about 2½ inches in diameter.
- Heat 1 tablespoon oil or ghee in a heavy skillet over medium heat. Add as many patties as you can without overcrowding the pan, allowing for a bit of space between each patty. Cook until bottoms turn brown, about 6-9 minutes. Carefully flip each patty over and cook again until brown, another 6-8 minutes. Transfer to a wire rack then repeat with the remaining patties, adding more oil if necessary.
- Serve with tzatziki, pita, diced red onion, and diced tomatoes.
